Bikini Recipe

Serves 10 guests

To make the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Drink (produces 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

For the Citrus Syrup: Combine the listed components into a pan, heat until it reaches a gentle boil, stirring to dissolve. Then, turn off the heat and leave to reach room temperature entirely. Pour to a sealable bottle, cap it and store chilled, where it will keep for up to one month.

Preparing the Batch Mix: Pour all the liquid ingredients into a large bottle, allow it to infuse for 60 minutes, then strain preferably using muslin, making it completely strained.

To serve: Measure 85ml of your cocktail base into your mixing glass packed with ice, and stir lightly for one minute until cold. Pour to a cold coupe glass or a similar vessel, top with some cranberries and complete it with a light spray with the mandarin essence above the glass.
